You will find that Ginjo and Daiginjo are most suited to chilling at 5 to 10°C.
SAKE OUT OF THE FRIDGE
Fridge temperature will vary so it’s worthwhile finding out what temperature your fridge is set to. Yours could be 3°C. It could be 12°C. Fridges also have warmer and cooler spots so your fridge gauge will not be exactly accurate. And when you pour it into an unchilled glass the temperature of the sake will drop.
If you have your fridge set to less than 8°C then serving chilled sake is quite simple, just take it out of the fridge and serve. By your second glass the sake temperature will have come up a few degrees and you’ll find how versatile sake is. Remember that a glass from the cupboard will warm sake from the fridge a little.
If you’re drinking one or more bottles of sake in a sitting and the bottles will most likely sit on the table for more than 20 minutes, ice buckets are a good idea to keep the temperature cool, but do remember to rotate them in and out of the bucket to keep at your favourite drinking temperature.
CHILLING SAKE FROM ROOM TEMPERATURE
If you have a bottle you want to chill down quickly wrap it in a wet tea towel and put it in the freezer for 20 minutes or so. Alternatively put your sake in a bath of ice water or ice bucket to chill down.
